Green Chile Shrimp Alfredo

1/4 cup butter

2 cloves of minced garlic

2 cups of heavy cream

pinch of nutmeg

1 cup grated Parmesan cheese

1/2 cup grated Romano cheese

1 Tbsp white pepper

1 cup of fire roasted green chiles

1 pound of shrimp peeled and deveined

16 ounces of cooked pasta( according to the manufactors directions)

1/4 cup chopped cilantro

1/4 cup grated parmesan

Melt butter in a large sauce pan over medium high heat for about 1 minute, continue to stir to prevent the garlic from burning. Add cream and nutmeg and continue to cook over medium heat for about five minutes. Add Parmesan and Romano cheese and whisk into the cream mixture until smooth. Continue to monitor the heat being careful not to burn the mixture. If it becomes to thick add broth to thin it out,add a tablespoon at a time. Add fire roasted green chiles and white pepper to the sauce. Add the shrimp and stir for four minutes on the heat and then remove from the heat. Stir occasionally to prevent from burning. Mound cooked pasta in servingĀ  bowls ladle sauce over noddles and sprinkle with cilantro and cheese. Serve
